The natural process is the oldest method there is, and the most demanding. Instead of washing the fruit away, we dry the cherries whole in the sun, letting the bean soak up everything around it. Get it right — and our drying is carefully calibrated so it does — and you’re rewarded with the most fruit-forward coffee we make.
Expect something bold and a little wild: deep berry sweetness, a touch of ferment, and a jammy richness you won’t find in a washed cup. Distinctive, memorable, and unlike most coffee people have tried.
Tasting notes: brown sugar, tangerine, black cherry, strawberry, mulled wine, honeysuckle, butterscotch, and lime — wildly layered and fruit-forward.

Discovered Hala tree on our visit to the Island. Have since been back multiple times and stock up every time. We’ve since ordered online with reoccurring shipments so we don’t run out in between! Naturals
Drying the coffee beans with the fruit on imparts unique floral nuances that you just can’t find in other coffee. From time to time I experiment with others—even naturals from elsewhere, hoping for a less expensive alternative, but nothing comes close. The medium regular roast from is my wife’s favorite, but for me is a far away 2nd best, that I’ll drink only when I run out of my naturals.

The Red Bourbon Naturals was my favorite. The Naturals takes the spot after the Red Bourbon Naturals batch became unavailable. This is a medium body with balanced and velvety mouthfeel. Bright and crisp, very smooth, clean and lust finish.
