Bourbon beans are known for their deep, buttery chocolate flavors, as well as their sweetness and very light fruit overtones. Because of those attributes, Red Bourbon responds very well to other processing methods.
Honey processing is a method that blends the clarity of washed coffee with the richness of natural processing. Instead of fully washing or drying the coffee cherry, we leave part of the sticky mucilage—often called the “honey”—on the bean during drying. This technique allows the natural sugars of the fruit to interact with the bean in a unique way.
The result is a cup that showcases the signature smooth chocolate notes of Red Bourbon, with an added depth of sweetness, a hint of ripe fruit, and a velvety finish. Every step of this process is done with intention.
