Extra Fancy is the top of Hawai‘i’s grading scale — our largest, densest, most flawless beans, the ones that give a home roaster the most to work with. We hand-pick the cherries, ferment and wash the beans overnight, then dry them slowly on open decks in the Hawaiian sun, so what reaches you is clean, green Kona at its very best — unroasted, and entirely yours to shape.

Take it light to chase the bright, fruity high notes, or push it darker for body and depth — the bean has the range to reward either. Available in quantities up to five pounds, so you can dial in your perfect roast and then make it again.
