This process comes from the wine industry into coffee practice, (hence vine inspired names for our Micro Batches) There is a large array of yeasts to choose from. Each yeast will enhance a desirable trait/characteristic in vine or coffee It is important to know the coffee origin characteristics to choose the appropriate yeast. Several different desirable traits are present in any coffee. We used different yeast on SL 28 this season to play with flavors.
